Learn to cook @chefkunal's desi bite-size menu, with a special twist! . . –> CHEESE PAANI PURI RECIPE: -To make white sauce, heat butter in a pan, add maida, milk and keep stirring continuously. Turn off the fire. Add grated parmesan cheese, mozzarella cheese and mix well. -To make red sauce, heat olive oil in a pan, add ginger, chilli flakes, tomatoes, salt, basil leaves and stir it. -Add the white sauce into the pan with red sauce and mix well. Put this mixed sauce into a bowl and blend well. Add salt, pepper and mix it. -For filling, take a bowl and add chopped cucumber, bell peppers, salt, pepper, onion, basil leaves, lemon juice, a dash of olive oil and mix it well. -Take paani puri shells, add to it this filling and sauce. The dish is ready to be served! . . —> BHEL PURI SALAD RECIPE: -In a bowl, add puffed rice, sev, chana dal namkeen and pomegranate seeds, chopped onion, coriander leaves, tomatoes and green chillies. -Add chaat masala, sliced aam papad, toasted sunflower seeds, chopped raw mango, mustard oil, lemon juice and mix it well. Your bhel puri salad is ready to be served! . . —> ALOO BOMB RECIPE: -Heat oil in a pan and add to it mustard seeds, red whole chillies, curry leaves, chopped green chillies, ginger and turmeric powder, and keep stirring it. -Add mashed potatoes and salt to the pan and mix well. Turn off the fire and let it cool. -In a bowl, put this mixture, add thick cheese sauce and salt, and mix well. Make balls of this mixture and cover it with boondi. -Heat oil on a pan and deep fry these aloo balls. Garnish with coriander leaves and serve hot. . . —>DAHI BLUEBERRY TART RECIPE: -Take finely powder biscuits in a food processor. Add this biscuit powder to a bowl and add melted butter. Mix well. -In a tart mould, press this mixture around the edges and bottom to create tart shells. Refrigerate it for a few hours. -Remove the tart from the refrigerator and pop out the tart shells. -In a bowl, add hung curd, honey, finely chopped orange rind, thyme, vanilla extract, and candied ginger. Here are all the ingredients you need to make yourself some ‘Cheese paani puri’:

For White sauce
2 tbsp. butter
2 tbsp. maida
2 cups milk
2 tbsp grated parmesan cheese
4 tbsp. mozzarella cheese

For Red sauce
3 tbsp. olive oil
1 tbsp. garlic chopped
Pinch of chilli flakes
1 ½ cup chopped tomatoes
Salt, to taste
5 – 6 basil leaves

2 tbsp. milk
Pinch of salt
Pinch of pepper

For filling
¼ cup chopped cucumber
¼ cup chopped bell peppers
8 – 10 paani puri shells
Pinch of salt
Pinch of pepper
1 tsp. chopped onion,
Few sprigs of basil leaves
1 Lemon
1 tbsp. olive oil

Here is how you can get the job done:

  • To make white sauce, heat butter in a pan, add maida, milk and keep stirring continuously.
  • Turn off the fire. Add grated parmesan cheese, mozzarella cheese and mix well.
  • To make red sauce, heat olive oil in a pan, add ginger, chilli flakes, tomatoes, salt, basil leaves and stir it.
  • Add the white sauce into red sauce pan and mix well. Put this mixed sauce into a bowl and blend well. Add salt, pepper and mix it.
  • For filling, take a bowl, add chopped cucumber, bell peppers, salt, pepper, onion, basil leaves, lemon juice, a dash of olive oil and mix it well.
  • Take paani puri shells, add this filling and sauce. It’s ready for serving.

4 tbsp. oil
1 tsp. mustard seeds
2 – 3 red whole chilli
Few sprigs of curry leaves
2 tsp. chopped green chillies
1 tsp. ginger
½ tsp. turmeric powder
3 cups mashed potatoes
Pinch of salt
2 tbsp. white cheese sauce (thick)
Pinch of salt
1 cup boondi
Oil for frying
Few sprigs of Coriander & mint

Here is how you can get the job done:

  • Heat oil in a pan, add mustard seeds, red whole chillies, curry leaves, chopped green chillies, ginger, turmeric powder and keep stirring it.
  • Add mashed potatoes, salt and mix it well. Turn off the fire and let it cool.
  • In a bowl, put this mixture, add thick cheese sauce, salt and mix it. Make balls of this mixture and cover it with boondi.
  • Heat oil on a pan and deep fry these aloo balls. Garnish with coriander leaves and serve hot.

Here are all the ingredients you need to make yourself some ‘Bhel puri salad’:

1.5 cups puffed rice
1 cup sev
½ cup chana dal namkeen
1 cup pomegranate seeds
¼ cup onion chopped
Coriander leaves chopped
1 tomato chopped
1 green chilli chopped
Chaat masala to taste
3 – 4 aam papad
1 tbsp. toasted sunflower seeds
3/4th cup raw mango chopped
1 tbsp. mustard oil
1 lemon

Here is how you can get the job done:

  • In a bowl, add puffed rice, sev, chana dal namkeen and pomegranate seeds, chopped onion, coriander leaves, tomatoes and green chillies.

15 – 20 biscuits
½ cup butter
2 tbsp. orange rind
1 cup hung curd
2 tbsp. honey
Few sprigs of thyme
1 tsp. vanilla extract
1 tbsp. candied ginger chopped
1 cup blueberries

Here is how you can get the job done:

  • Finely powder biscuits in a food processor. Add this biscuit powder into a bowl add melted butter and mix it well.
  • In a tart mould, press this mixture around the edges and bottom to create tart shells. Refrigerate it for few hours.
  • Remove the tart from the refrigerator and pop out the tart shells.
  • In a bowl, add hung curd, honey, finely chopped orange rind, thyme, vanilla extract, candied ginger and mix it well.
  • Fill the tart shell with the yoghurt mixture and garnish with blueberries and orange rind.
