‘Chaat Hummus’ To ‘Aloo Zeera Quesadilla‘: Try Chef Kunal Kapur’s Indian Fusion Menu

The menu that Chef has put together for her is an Indian Fusion menu of Khasta Dhoda, Chaat Hummus, Ice Cream Soda and Aloo Zeera Quesadilla. Here are all the ingredients you need to make yourself some ‘Chaat Hummus’:

2 cups boiled chickpeas

2 tbsp. chaat masala

1 tbsp. roasted jeera

1 tsp. chopped green chillies

Handful mint leaves

1 tsp. black salt

½ cup tamarind chutney

2 lemons

¼ cup sev

3 tbsp. olive oil​

Dash of water

Pinch of salt

1 tbsp. chopped onions

1 tbsp. chopped tomatoes

1 tbsp. chopped coriander

2 tbsp. olive oil

Pinch of cumin

Boiled chick peas & coriander sprigs for garnishing
Pinch of red chilli powder

Here is the method:

  1.  In a food processor, add boiled chick peas, chaat masala, roasted jeera, chopped green chillies, mint leaves, black salt, tamarind chutney, lemon juice, sev, olive oil, water and blend it well.
  2. Put this mixture in a bowl, add chopped green chillies, black salt, salt, roasted jeera, tamarind chutney, chaat masala, chopped onions, chopped tomatoes, chopped coriander, lemon juice and mixt it.
  3. Put it into a serving bowl, use the back of a spoon and make a small depression and pour olive oil in it. Sprinkle jeera and red chilli powder. Garnish with boiled chickpeas and coriander sprigs.

Here are all the ingredients you need to make yourself some ‘Aloo Zeera Quesadilla’:

2 dough balls (whole wheat or all-purpose flour)

½ cup mayonnaise

4 tbsp. mint chutney

½ cup grated cheese

1 cup leftover aloo zeera

1 tbsp. chopped onions

1 tbsp. chopped tomatoes

1 tbsp. chopped coriander

½ lemon

1 tbsp. oil

Few coriander sprigs & red chillies for garnishing

Here is the method: 

  1. Roll out the dough balls like roti. Half cook it on both sides on a heated tawa.
    In a bowl, add mayonnaise, mint chutney, grated cheese and mix it. Mash the leftover aloo jeera.
  2. For stuffing, take the half cooked roti, apply mint chutney mayonnaise mixture and then spread mashed aloo jeera mixture on it.
  3. Add chopped onions, chopped tomatoes, chopped coriander, lemon juice, grated cheese and cover it with another roti. Press it down gently.
  4. Heat oil in a tawa and place this quesadilla. Apply oil and toast on both sides until it becomes golden and lightly crisp. Slice into quarters and garnish with coriander sprig. Serve it hot.

Here are all the ingredients you need to make yourself some ‘Khasta Dhoda’:

3 dhoda barfi

3 tbsp. pistachio

2 filo sheets

1 tsp. butter

1 cup of water

Oil for frying

1 tbsp. icing sugar for dusting

Here is the method: 

  1. In a bowl, add dhoda barfi, pistachio and mash it. Take a filo sheet, cut into square pieces. Apply butter and cover it with the other square piece.
  2. Apply water on one side of the filo sheet, make cylindrical rolls of the dhoda mixture and roll it completely.
  3. Heat oil for frying in a pan, put the dhoda rolls and deep fry until it turns golden. Strain it out of the oil, garnish with icing sugar and pistachio.

Here are all the ingredients you need to make yourself some ‘Custard’:

3 cups of milk

1 cup cream

2 tbsp. custard powder

2 tbsp. powdered sugar

Dollop of butter

Handful of nuts for garnishing

Here is the method: 

  1. To make custard, heat milk in a pan and add cream.
  2. In a bowl, add milk, custard powder and mix it well.
  3. Add powdered sugar to heated milk mixture and boil it. Add the custard mixture, butter and keep stirring it.
  4. Pour it into a serving bowl, add handful of nuts for garnishing.

Here are all the ingredients you need to make yourself some ‘Ice Cream Soda’:

2 tbsp. rose syrup

1 scoop vanilla ice cream

2 tbsp. chia seeds

1 tbsp. tutti frutti

2 tbsp. pomegranate seeds

1 tbsp. pistachio

2-3 cherries

1 bottle chilled soda

Here is the method: 

  1. In a glass, add rose syrup, vanilla ice cream, chia seeds, tutti frutti, cherries, pistachio and top up with chilled soda. Serve it chilled.
