Want a zero-fuss, fulfilling dish? Look no further than a homestyle Chicken Curry, perfect to pair with some Tandoori Roti, Laccha Paratha or Jeera Rice. This is flavourful, comforting, and undeniably perfect for a family meal, as well as a solo dining experience!
To make curry paste: blend 5cm ginger, 5 peeled garlic cloves, 1 chopped lemongrass, 2 chopped red chilli, 3cm turmeric, 5 chopped shallots. Fry curry paste until fragrant. Add 2 large sliced onions. Add 2 chopped chicken breasts seasoned with salt and pepper. Mix together and cook for a few mins. Add half pint chicken stock and 200ml coconut milk. Add one cinnamon stick. 3 star anise. 2 tablespoon fish sauce. 2 table spoon soy sauce. Add 4 lime leaves or lime zest. Bring to boil then simmer for 20 mins or until chicken cooked. Serve with rice and garnish with coriander leaves.
