Food has been an integral part of Chef’s childhood and there are some family recipes that are very close to his heart. In this episode he shares these recipes along with fun anecdotes from his childhood. Kebab curry, Bhutta chaat, Achaari pulao and Fruit cream are easy to make recipes that anyone can try at home. Here are all the ingredients you need to make yourself some ‘Kebab curry’:

4 – 5 seekh kebab

1 cheese slice

2 tbsp. oil

1 bay leaf

1 black cardamom

3 – 4 cardamom

1 javitri

Few peppercorns & cloves

3/4th cup onion paste

1 tsp. turmeric

1 tsp. red chilli powder

1 tsp. chopped green chillies

1 tsp. coriander powder

1 tsp. cumin powder

1/4th cup yogurt

Salt to taste

3/4th cup tomato puree,

1.5 cups water

Pinch of kasoori methi powder

3/4th cup cream

Few sprigs of chopped coriander

2tbsp. chopped sprig onions

1tsp. cream

Here is how you can get the job done:

  • Take ready made seekh kebab and stuff it with slices of cheese. Heat oil in a pan. Add bay leaf, black cardamom, green cardamom, javitri, peppercorns, cloves and stir it.
  • Add onion paste, turmeric powder, red chilli powder, chopped green chillies and stir it well.
  • Add coriander powder, cumin powder and cook on slow flame. Add yoghurt and quickly stir it.
  • Add salt, fresh tomato puree and stir it. Add water and allow it to come to a boil.
  • Cut the seekh kebab into small chunks and add it to the gravy, add kasoori methi powder and cook for 20 minutes.
  • Turn off the fire and add cream and mix it gently. Add chopped coriander leaves.
  • Garnish with spring onions and a dash of cream.

Here are all the ingredients you need to make yourself some ‘Bhutta chaat’:

1 corn on the cob

1.5 cups water

3/4th medium bowl milk

Salt to taste

Dollop of butter

1/4th onion finely chopped

1/4th tomato chopped

Chopped green chillies

1 tsp. chaat masala

½ lemon slice

1 tbsp. tamarind chutney

Few sprigs of coriander for garnishing

Pinch of black salt

1 tbsp. olive oil

Here is how you can get the job done:

  • Peel the corn on cob. Take a pan, add water, milk, salt, butter, corn and cover it. Boil it for 20 minutes. Pull it out and allow it to cool.
  • Roast this corn on fire. Scrape out the corn chunks, put it in a bowl, add chopped onions, chopped tomatoes, green chillies, chaat masala, lemon slice, saunth chutney and mix it well.
  • Add chopped coriander leaves, black salt,a dash of olive oil and mix it well. Put it into the serving bowl.

Here are all the ingredients you need to make yourself some ‘Achari pulao’:

2tbsp. red chilli pickle

4tbsp. oil

1tsp. jeera

3/4th onion sliced

3 garlic cloves

1 medium bowl soaked rice

1 ½ medium bowl water

Here is how you can get the job done:

  • Roughly chop chilli pickle. Heat oil in a pan, add cumin and saute lightly.
  • Add sliced onions, smashed garlic, chopped pickle and saute it lightly. Add soaked rice, water and lightly mix it.
  • Cover it and let it cook completely. Serve hot

Here are all the ingredients you need to make yourself some ‘Fruit cream’:

3/4th medium bowl yogurt

2 tbsp. powdered sugar

1/2 tsp. vanilla extract

5 – 6 almonds

Handful of pistachio

1 pear

1 apple

1 banana

2 tbsp. pomegranate seeds

2 tbsp. tutti frutti

1 muffin

Few blueberries

1 swiss roll

1 tsp chia seeds

Here is how you can get the job done:

  • Take a bowl, add curd and whisk it. Add powdered sugar, vanilla extract and mix it well .Take almonds , pistachio and chop it finely. Add it to the curd.
  • Chop banana, pear, apple into small cubes and add it. Mix it lightly. Add some pomegranate seeds, tutti frutti, mashed muffin and sliced blueberries to it. Cut slices of swiss roll.
  • In a glass, put pomegranate seed as the base, then put swiss roll and pour the fruit cream mixture. Garnish with blue berries and chia seeds. Serve chilled.
