Pindi Chole Recipe By Chef Kunal Kapur

Ingredients
- 250 grams Pindi Chole
- 1 tbsp tea leaves
- 1 tbsp cloves
- 3-4 cinnamon sticks
- 5-3 green cardamom pods
- 2-3 Bay leaves
- Pinch of salt
- 100 grams sliced ginger
- 2-3 slit green chillies
- 1 tbsp turmeric powder
- 1 tbsp red chili powder
- 1 tbsp dhaniya powder
- 1 tbsp jeera powder
- 1 tbsp pomegranate powder
- 1 tbsp dry mango powder
- 1 tsp kasuri methi powder
- 2 tbsp ajwain
- 4-5 garlic cloves
- A pinch of black salt
- 1 tbsp tamarind water

Method
- Soak your pindi chole in a large bowl of water overnight.
- In a small muslin cloth take some tea leaves, cloves, cinnamon sticks, cardamoms and bay leaves. Tie the cloth and place it in your pindi chole pot with a pinch of salt.
- Cover the pot with a lid and allow your cholas to boil for an hour.
- Once your cholas are boiled, add turmeric powder, red chili powder, dhaniya powder, jeera powder, pomegranate powder, dried mango powder, and kasuri methi powder.
- In a pan, prepare a tadka by heating some oil and add ajwain, sliced ginger, slit green chilis and garlic cloves.
- Add this tadka on top of the boiled cholas and mix it well.
- Por a little stalk to the pot and allow it to boil.
- Add a pinch of table salt and black salt to this and mix well.
- Cover the pot and let the cholas cook for a while so they become a little mashy.
- Serve them hot and top it with some fresh cilantro.
