Family Food Chronicles : The Very Decadent Mutton Dalcha

Every now and then one feels like cooking up a storm in the kitchen, making something that involves layers of texture and flavours but comes together as one wholesome dish. Mutton Dalcha is such a dish. a family favourite, it is laborious to prepare, but once prepared no one can stop asking for more.

My mutton dalcha is lathered with flavours and ingredients that are varied yet complement each other, and with heaps of aroma and fragrances the dish is perfect for all sensory organs; it looks beautiful, it tastes fulfilling, and it smells earthy. However, like I mentioned it takes a lot of steps to make this, so if you want to make my family style’s mutton dalcha, I have this recipe which notes down every thing very specifically so you can take out some time and cook this delicious dish!

Ingredients

1 KG MUTTON

½ KATORI ARHAR DAL

½ KATORI CHANA DAL

L ½ KATORI MASOOR DAL

4-5 TEJ PATTA

3 BADI ELAICHI

8-9 CHOTI ELAICHI

5-7 LAUNG

2 DALCHINI STICKS

2 PIECES ADRAK

½ KATORI LAHSUN

2-4 HARI MIRCH

PUDHINA LEAVES

DHANIYA LEAVES

4-5 PYAAZ SLICED

3 Tbsp TEL

1 ½ Tsp SABUT GARAM MASALA

2 ½ tsp JEERA

1 ½ tsp SAUNF

1 ½ Tsp KAALI MIRCH

1 ½ Tsp DHANIYA POWDER

2-3 TAMATAR

2 Tsp GARAM MASALA POWDER

1 ½ Tsp HALDI

2 Tsp KASURI METHI

300 Grams LAUKI

3-4 PIECES LAL MIRCHI

1 Sp LAL MIRCHI POWDER

Method:

Wash the mutton and drain the water, now soak all the dals for 2 hours and then drain the water. After this, make a paste using Tej Patta, Badi and Choti Elaichi, Laung, Dalchini, Adrak, Lahsun, Hari Mirchi, Pudhina, Dhaniya. Take oil and add Sabut Garam Masala and then add Pyaaz. Now add Jeera, Saunf, Kaali Mirch, Dhaniya Seeds and roast them all in low flame. Mix it all and let the Pyaaz turn a brown shade and finally add the Mutton to this mixture. Now add the Green Paste to it. Post this, add Haldi Powder, Namak, Lal Mirchi Powder, and Dhaniya Powder and after 2-3 minutes add Tamatar. Cook this for 5-7 minutes and add Garam Masala Powder, give 5-6 whistles. In the mean-time cook the Dal and add some Haldi and Namak. Give 3 whistles. Then add Mutton to this. Add some Kasuri Methi in it and cook it on low flame for 5-7 minutes. Now add Lauki to it and cook till the Lauki is done, finally add chaunk of Tel, Lal Mirchi, and Lal Mirchi Powder. Dish is ready to eat, you can serve it with Chappati or Rice and enjoy the delicious and comprehensive flavours!
