Family Food Chronicles with Himangini: Hosting The Perfect Christmas Lunch

Just like Diwali, Christmas is also a festival about food – well about presents and food. The weather calls for warm, gooey, cheesy recipes that melt in our mouth, just as we prepare for a grand Christmas feast. From caroling, to keeping presents under the Christmas tree, to wearing festive sweaters – a grand feast just makes everything come together lovingly. My kids love Christmas for obvious reasons, but they also love the fare I prepare year after year using the traditional trimmings of Roast Chicken, Shepherd’s Pie, and some delicious Chocolate Cake. The crispiness of roast chicken, with the cheesy chewiness of shepherd’s pie, and ultimately the sinful texture of a creamy chocolate cake.

So, let me take you on a festive sleigh ride, where the destination is food, food, and more yummy food!

Here is the recipe for Shepherds Pie:

Minced lamb – 750 grams

Potatoes – 1 kg peeled and cubed

1 large onion finely chopped

4 to 6 cloves garlic finely chopped

1 celery stalk finely chopped

Cream – 50 grams

Butter- 50 grams

Tomato Purée – 200 grams

Worcestershire Sauce – 2 tbsp

Flour- 1 tbsp

Lamb or chicken stock- 1 1/2 cup

Salt and pepper to taste

Olive Oil- 2 tbsp

Method:

Preheat the oven to 220˚C. Heat the oil in a large pan over medium-high heat. Now add the onions and garlic, cook till transparent. Add the celery and sauté for 2 minutes. Now add the minced lamb, season with salt and pepper, and cook for 10 minutes until the meat is well browned. Add the tomato purée and Worcestershire sauce. Cook for 1-2 minutes, stirring constantly. Add the flour and stock, bring to a boil, and cook the meat until the stock has reduced to a thick, rich gravy. Meanwhile, cook the potatoes in a large pot of boiling salted water until tender. Drain and allow them to cool. Now mash them evenly until smooth. Add salt, butter and cream. Combine evenly. Spread the lamb mixture into a large baking dish. Top with a thick layer of the golden mashed potatoes. Bake for 20-30 minutes, until the potatoes are golden brown. Serve piping hot.

Here is the recipe for Seasonal Veggies Bake:

Yellow bell pepper- one

Red bell pepper- one

Zucchini- one

Mushroom- 200gms

Broccoli- one

Garlic -5 to 6 pieces

Herbs – oregano, rosemary, black pepper, paprika

 

Method:

Cut the vegetables and put in all the herbs, add salt and some chilli flakes. Take a baking tray and cover it with foil. Spread the vegetables and put some olive oil and add some butter. Bake it for 15 minutes at 200 degree C in oven.

Here is the recipe for Roast Chicken:

Full chicken -1 kg
Curd -1/2 kg
Garlic paste -2 tbsp
Ginger paste-2 tbsp
Soya sauce -1 tbsp
Red Chilli powder -1 tsp

Method:

Marinate the chicken with all the ingredients and keep it for 3-4 hours. Take a pan and put 1/2 tbsp, then put the chicken and let it cook from all side till it’s fully brown from above. Now take out the chicken and put the sauce and cook it for 15 minutes and then add small patatoes in it. Finally add the chicken and cook it for another 10 minutes in the gravy.

Here is the method for Rice:

Cook the rice, take olive oil, add some butter in a pan and put the rice. Then add some salt and some green of spring onions and finally serve it hot

Here is the recipe for Chocolate Cake:

Maida – 1 1/2 cup
Sugar – 1 1/2 cup
Chocolate powder -1/3 cup
Egg – 2
Baking soda -1/2 tsp
Baking powder-1/2 tsp
Vanilla essence – 11/2 tsp
Milk -1/2 cup
Vegetable oil -1/3 cup
Warm water -1/2 cup

Method:

Mix everything together and bake it for 45 min at 120 degree C
